When people hear the words Japanese knife, they often think of exceptional craftsmanship, outstanding performance, and a tradition that has been passed down through generations.

Authentic Tosa knives represent that tradition through centuries of craftsmanship, combining the skills of experienced Japanese blacksmiths with techniques that continue to be handed down today.

Unfortunately, not every knife marketed as a “Japanese knife” today truly reflects that heritage.

After working as a chef in both Japan and Australia for more than 25 years, I came to appreciate how much difference a well-crafted knife can make. A great knife is far more than just a kitchen tool—it becomes an extension of the chef’s hand, making every cut more precise, enjoyable, and effortless.

Along the way, I also became aware of another reality.

Japan is home to many highly skilled blacksmiths who continue to forge exceptional knives using techniques that have been refined and handed down over generations. Yet much of their work remains relatively unknown outside Japan.

At the same time, many products sold internationally as “Japanese knives” are mass-produced and have little connection to the craftsmen, traditions, and regional heritage that made Japanese blades respected around the world.

I believed there should be a way to change that.

That belief became Asaoya Yaichi.

Our mission is simple:

To bring authentic handcrafted Tosa knives from Japan to chefs, home cooks, and collectors throughout Australia.
